Made with 100% Hida Hotaru rice grown by local “Sugata Rice” farmers and brewed with a high-acidity G yeast discovered in Gifu, it is a true regional specialty produced entirely within the prefecture.

Founded in 1723 in Fushimi, Kyoto, Kitagawa Honke has thrived in a region blessed with pristine waters and the refined culinary traditions of Kyoto.
This plum wine is crafted with 100% premium gyokuro tea from Kyoto’s Uji Hekisui-en garden.
It combines the refined aroma and refreshing astringency of gyokuro with the rich depth and acidity of plum wine, creating a unique harmony of flavors.
A staff favorite, it is the brewery’s most popular plum wine.

IWANOI Junmai Daiginjo Eagle

Founded in 1723 in Onjuku, Chiba, Iwase Brewery uses one of Japan’s hardest, most mineral-rich waters to craft sake of clarity and structure through the traditional yamahai method.
This junmai daiginjo offers an elegant sweetness that spreads smoothly across the palate, finishing crisp and clean for a refreshing, never tiring experience.

Founded in 1723 in Onjuku, Chiba, Iwase Brewery uses one of Japan’s hardest, most mineral-rich waters to craft sake of clarity and structure through the traditional yamahai method.
IWANOI has been producing aged sake since the 1950s, maturing it at room temperature in dark cellars to avoid light and fluctuation.
The result is a graceful amber hue with aromas of ripe fruit and flavors of apricot. Balancing sweetness, depth, and umami, this koshu is highly praised for its richness and refined character.

Founded in 1141 in Kasama, Ibaraki, Sudo Honke is Japan’s oldest brewery and the first to produce namazake and hiyaoroshi.
This prestigious junmai daiginjo was served at the Ise-Shima Summit and the World Economic Forum in Davos.
It offers a profound flavor with elegant aroma and was awarded 91 points by Robert Parker’s Wine Advocate.
The “Kakunko” (720 ml) achieved remarkable valuations, reaching ¥1.45 million in the U.S. and ¥3.8 million in Singapore.

Founded in 1141 in Kasama, Ibaraki, Sudo Honke is Japan’s oldest brewery and the first to produce namazake and hiyaoroshi.
Highly regarded both by sake connoisseurs and overseas, this sake is known for its depth and satisfying character.
It combines a bold, full-bodied flavor with moderate, complex acidity, achieving a remarkable balance that captivates even the most discerning palates.

Kimoto Junmai Dai Ginjo Satonohomare Unfiltered and Once-Pasteurized

Founded in 1141 in Kasama, Ibaraki, Sudo Honke is Japan’s oldest brewery and the first to produce namazake and hiyaoroshi.
This sake offers a deep, robust flavor with a long finish. Its most remarkable feature is the unique kimoto method, continuously preserved since around 1100.
Wine critic Robert Parker praised it as “the white wine of Burgundy,” and at the Catad’Or Wine Awards, founded by MW Jancis Mary Robinson and others, it won the Grand Gold in 2020 as the only sake honored.

Yoakemae Kinuka Junmai

Founded in 1864 in Kamiina, Nagano, Ono Shuzo was established on the eve of the Meiji Restoration.
Made with 100% top-grade Yamada Nishiki rice from Shimo-Tojo, Ono City, Hyogo—known as Japan’s finest sake rice—this junmai sake is also gentle on the skin.
It contains a high level of α-EG, a natural sake component that helps increase collagen in the skin’s dermal layer.
