    Founded in 1862 in Nishinomiya, Hyogo, Hakutaka Brewery is the sole official sake purveyor to the Ise Grand Shrine, upholding its creed of “absolute excellence and quality first.”
    Guided by the spirit of crafting only what it truly believes in, the brewery produces a refined plum liqueur by steeping select domestic plums in junmai shochu made from Yamada Nishiki rice and famed Miyamizu water. Brewed once a year in small batches, it offers delicate sweetness and depth, earning Gold at both the National Plum Wine Competition and WashuFes Grand Awards.

    Founded in 1851 in Ogawa, Saitama, Matsuoka Brewery uses pure hard water from the Chichibu mountains and has earned numerous gold medals at home and abroad.
    True to the name Teimatsu, symbolizing imperial strength, it blends precise, traditional brewing with innovative creativity. This limited-edition tokubetsu junmai, crafted by the seventh-generation brewer, offers a “new generation of clean, dry sake” — sharp yet aromatic, with balanced umami. Unfiltered and in-bottle pasteurized, it retains a refined aroma and stable flavor, available only in summer through select retailers.

    Acclaimed with 95 points from the Parker rating system, this sake offers a smooth, mellow flavor that balances richness and acidity, finishing long with subtle bitterness and sweetness. When gently warmed, it reveals a creamy, full-bodied character, pairing beautifully with rich dishes. It earned the Grand Gold Award at the Washu Fes Awards and Gold at the 2024 National Warmed Sake Competition.

    Brewed by Iwase Shuzo with Yamada Nishiki rice polished to 50%, this elegant junmai daiginjo delivers a refined sweetness that spreads smoothly across the palate, followed by a clean, crisp finish that invites another sip. With an alcohol content of 16%, it is best enjoyed chilled. Its balanced flavor pairs beautifully with dishes such as sweet and spicy chili shrimp or teriyaki yellowtail, making it a versatile companion to both delicate and richly seasoned cuisine.

    Founded in 1141 in Kasama, Ibaraki, Sudo Honke is Japan’s oldest brewery and the first to produce namazake and hiyaoroshi.
    Upholding its motto of valuing sake, rice, earth, water, and wood, it continues to craft unique kimoto-style sake dating back to the 1100s. “Sato no Homare,” a gold medalist at the International Wine Challenge, offers crisp balance and is praised by Robert Parker as “the white wine of Burgundy.” The premium Junmai Daiginjo “Kakunko,” served at the Ise-Shima Summit, earned 91 Parker Points and fetched up to ¥3.8 million overseas.
